Weird one and not really a splurge, but in comparison there’s cheaper options. I found tins of beans, coated in marinades like tahini, vinegarette, and garlic oil etc, in single serves, and it’s meant I’m actually eating lunch. I throw them into a bowl, warm them a bit, they’re so unbelievably tasty! I throw in some chopped salad veg, I leave prepped in my fridge, and a single serve of rice, and bam! It’s delicious! So flavourful and took me 2 minutes to make. They’re like $1.60 each and I use 3 per meal. It feels “splurgey” next to the actual price of beans. It’s my goal to figure out how to make the dressings, and just open a tin of them. But this has been a game changer, I have kids with disabilities and very high needs and that’s made meeting my needs difficult and a main goal. I need easy stuff, that’s not bland and gross. Win all around, I feel.
