The only objectively true thing is that Apple devices have stronger hardware security that can only be matched on Android by GrapheneOS. So if your primary concern is the feds trying to crack your phone using their Israeli software, it might be better to use Apple.
Though keep in mind that (IIRC) feds were able to restore received Signal messages (after the app was deleted) from an iPhones internal push notification database.

given how most apple software is proprietary, it’s a safe bet to assume that the feds have some backdoors in there anyway.
